Ingredients for a Tasty Salad.

In a bowl, combine the following in whatever quantities you desire:

  • romaine lettuce
  • red/orange/yellow bell pepper
  • canned black beans, rinsed
  • grape tomatoes
  • green onions

Use a tasty jarred salsa for dressing. Tasty and super healthy!


Best Fruit Salad Ever.

I’m a fruit salad connoisseur. Most of the time, I just toss some fruit together. But last night, as I was dicing some pineapple, an idea from the heavens hit me. And here it is…

  • 1/2 pineapple - peeled, cored, and diced
  • 3 Cara Cara oranges - peeled, cut in half, then sliced
  • 2 big handfuls of blueberries
  • a good amount of sliced strawberries, as many as you like

Toss all of the fruit into a bowl. Now for the dressing…

Put the juice, honey, and vanilla into a small, microwave-safe bowl. Nuke for about 15 seconds. Stir well, pour over fruit, and toss well. Let’s see if you can avoid eating the whole bowl.

Seriously, order some honey from Volcano Island. It’s spreadable crack. It’s unbelievable on biscuits, crumpets, or whole-wheat english muffins. Richard, the proprietor, is amazing. We met him when we went to Hawaii with Kat and Sean. Andy calls him “the Bee Whisperer.” Seriously, though, order some now. You will not regret it!


Moosewood Simple Suppers

Get this book. It’s great if you’re a workaholic and want to eat something healthy, and it’s great if you aren’t up for cooking for hours. Many dinners this week will come from this - between work and school, the last thing I want to do when I get home is cook something complicated.


Noodles Corner Wonton Soup

There is a little restaurant in Columbia, Maryland called Noodles Corner. Andy and I ate there often when we lived in Maryland, and we miss it. One of the many things we love there is their Wonton Soup - a big bowl of chicken wontons, ramen noodles, bok choy, and really tasty chicken broth. It might be my favorite soup on earth. And tonight, I will recreate it! I’ll post the recipe tonight.

Update: here’s the recipe… (for two)

  • 1 qt low-sodium chicken stock
  • 4 baby bok choy, washed with ends trimmed off
  • 10 frozen wontons (chicken, shrimp, whatever you like)
  • 2 packages of chicken ramen
  • 1 tsp chili sauce (sriacha, etc)
  • 1 tsp mirin
  • soy sauce to taste
  • 2 green onions, chopped

Bring chicken stock to a boil in a large pot. Add 2 cups of water and one of the soup mix packets from the ramen. Lower heat to a good simmer (not a hard boil), and add bok choy, wontons, and ramen. Add chili, mirin, and a bit of soy. When the ramen is done, check the seasoning of the broth and add a little more soy if needed. Serve in big bowls, top with green onions, and slurp.
